Though many busy parents and college students enjoy a tasty homemade meal or snack, they simply don't have hours to spend in the kitchen. Recipe Contest Rules
All Gluten-Free Recipe Entries Must:

1. Use a minimum of one Pamela's Products brand product as an ingredient;
2. List all ingredients with exact US measurements in order of use;
3. Include descriptions of any special gluten-free items that may not be readily available, or that require special notice to maintain the recipe as gluten-free;
4. Include complete step-by-step directions for preparation (including pan size, cooking/baking time, and temperature)
5. List size and number of servings produced. No illegible, incomplete, forged or altered entries will be accepted.

Recipes will be judged based on taste, ease of preparation, incorporation of recipe contest theme, use of Pamela's Products item(s), and actual convenience of the recipe. 2nd Annual National Gluten Free Challenge Kicks Off in April
Pamela's Products, the award-winning dedicated gluten-free food company, will again partner with the non-profit Gluten Intolerance Group (GIG) for the 2nd Annual Gluten-Free Challenge taking place over the weekend of May 21-22, 2011, during Celiac Awareness Month. Pamela's Products and the GIG believe that everyone can enjoy a delicious and satisfying gluten-free meal together whether it be a regular meal or a holiday event. With a mission to raise awareness about Gluten Intolerance (a digestive disorder, often including Celiac Diease, that can lead to malnutrition if not treated), the Gluten-Free Challenge brings families and friends back to the dinner table... together. More than 1500 people signed up for the 2010 Challenge to eat entirely gluten-free for one weekend, with continued sign-ups since the end of the Challenge in anticipation of the 2011 event.

With 1 in 100 Americans affected by Celiac Disease, and many more who are gluten-intolerant, the Gluten-Free Challenge invites the public to try one gluten-free dish, treat or meal a day for a month prior to the Gluten-Free Challenge weekend. The Challenge empowers people to learn more about this easily treatable disease and brings awareness to the choices faced by those who adhere to a gluten-free diet.

Sign-ups for the Gluten-Free Challenge are ongoing with the official launch beginning April 21, 2011, when participants who opt-in will start to receive 30 days of tips and recipes--one per day--in preparation for the Challenge Weekend. There will also be coupons, weekly giveaways and more.

According to the 2010 post-Gluten-Free Challenge survey, 80% of respondents found that the Challenge helped them gain a better understanding of living gluten-free, and 86% of respondents found the tips and recipes most helpful in meeting the Challenge. 66% of respondents already live a gluten-free life, and 34% are either a family member or a friend of someone who lives gluten-free. What is Celiac Disease:
GSE (Gluten Sensitive Enteropathy) includes celiac disease (CD) and dermatitis herpetiformis (DH). In these hereditary immune system disorders, protein fractions in wheat, rye and barley set off a chain of events that lead to tissue damage. Celiac disease involves destruction of the lining of the small intestine. Dermatitis herpetiformis involves destruction of the lining of the small intestine and includes a skin disorder where antibody deposits trigger itchy, blistering skin eruptions. Celiac disease is called the great masquerader.

Celiac disease is no longer considered just a gastrointestinal disorder. It is a multi-system, multi-symptom disorder, often without gastrointestinal (GI) symptoms. The prevalence of CD in the United States is 1 in 100 persons. The overall prevalence of gluten sensitive disorders is unknown but is possibly 2 to 3 times as high as that of CD. Very little information is available about gluten intolerance, which is not necessarily triggered by the immune system and is therefore not Celiac Disease.

Pamela's Organic Cookie Review
I got a package of Pamela's Chocolate Chunk Pecan Shortbread cookies sent to me at work a few weeks ago. My coworker and I dug right in. We both liked the cookies but they were much smaller than I remember from a few years ago. The cookies were a bit dry, but there was a nice balance of sweet and salt in each bite. I stopped at one cookie since I knew I was going out to dinner that night, but I definitely plan on eating more cookies again. I think it would be a nice snack with a cup of tea. My coworker (who eats gluten) agreed. I don't normally buy cookies, but I will definitely enjoy the rest of the box with him.

The great thing about Pamela's Products is that they have been around for so long so they have a good reputation in the gluten-free community. Their products are gluten-free and their organic line is made with over 70% organic ingredients.

Most would agree that a Holiday Season staple is Pumpkin Pie. To make the Perfect Gluten-Free Pumpkin Pie simply substitute traditional flour with Pamela's Products Gluten-Free Bread Mix:

Pie Crust
1/2 bag Pamela's Gluten-Free Bread Mix
1/2 teaspoon salt
2 sticks (16 TBSP) unsalted butter, chilled
6 to 7 tablespoons cold water

Filling
1 can of pumpkin puree (15 ounce)
1 can of evaporated milk (12 oz)
1/2 cup of sugar
2 large eggs
1 teaspoon of ground cinnamon
1/2 teaspoon of ground ginger
1/2 teaspoon of ground nutmeg
1/2 teaspoon of salt
Yield: One 9-inch pumpkin pie

In bowl, cut butter and shortening into Pamela's Gluten-Free Bread Mix with two knives until small pea sized pieces form. Slowly add water until dough comes together, not sticky. Add 1 teaspoon additional water if dough is too dry. Do not over handle dough. Roll out dough between two sheets of parchment or wax paper. Peel off top paper and invert into a lightly greased pie dish. Peel off second sheet and fix crust edge.

In medium bowl, beat eggs slightly with wire whisk. Beat in remaining filling ingredients. Pour filling into pie plate. Cover edge of crust with 2- to 3-inch strip of foil to prevent excessive browning. Place pie plate on bottom oven rack. Bake 15 minutes at 425°F. Reduce oven temperature to 350°F. Bake about 45 minutes longer, removing foil during last 15 minutes of baking, until knife inserted in center comes out clean. Cool 30 minutes. Refrigerate about 4 hours or until chilled.

Celebrate Gluten-Free Halloween with Pamela's

Gluten-Free Crepes
It's Sunday morning and I really wish I had some Nutella crepes and Italian coffee right now... seaside... with a cabana boy serving them to me. ;-) Ok, so much for day dreaming.

I saw this recipe a few weeks ago in the The Gluten-Free Challenge e-newsletter and it has been on my mind ever since. Sunday is usually my cooking day, so maybe I will try making these later today.

Pamela's Crepes
1 cup Pamela's Baking & Pancake Mix
1-1/3 cup water
1 egg (large)
1 tablespoon oil

Yield: approximately 9, 7-inch crepes.

Mix all ingredients together. Batter will be very thin. Preheat crepe pan or a round 12-inch pan (low to medium/low heat). Pre-grease skillet before baking each crepe. Pour 1/4 cup of batter into skillet and quickly rotate pan in circular motion to disperse the batter into a thin, even coat. Air holes will appear, do not try to fill them in. When edges start to brown, lift edges of crepe with spatula, then flip. Remove crepe and place flat on parchment or wax paper. Use a paper liner in between crepes when stacking while continuing to cook additional crepes. Keep crepes covered to prevent drying out. Fill with favorite fillings, roll and serve.

What is gluten?

Why is avoiding gluten important?
For some, gluten can be toxic. There are many conditions such as Celiac Disease, Gluten Intolerance and other illnesses that render gluten toxic to the body. Although some people have chosen to avoid gluten simply because they feel better, it is generally a medical condition that needs attention. If I need to follow a gluten-free diet, or one of my friends or loved ones does, what food can we eat?

Looking for Recipes: Pamela's Gluten-Free Bread Mix


I have a huge bag of Pamela's Gluten-Free Bread Mix but I don't have a large mixer or a bread machine. I have made bread from this mix before using a lot of stirring and kneading, but the bread came out feeling like a brick. Does anyone have good recipes that incorporate this Pamela's Gluten-Free Bread Mix but that does not require a stand-up mixer or bread machine! Thanks!!

Gluten-Free Cinco de Mayo

Developed by Texan, Ken H., the Tamale Style Stuffed Bread reflects the 'south of the border' flavors of the American Southwest. Just in time for Cinco de Mayo, this Tamale Roll recipe is perfect for the whole family. The recipe was selected from more than 100 recipes, by a panel of judges, that included company founder Pamela Giusto-Sorrells.

Tamale-Style Stuffed Bread
1 cup Pamela's Gluten-free Bread Mix
1 cup masa harina for tamales (naturally gluten-free corn flour)
1 teaspoon baking powder
1/2 cup lard or vegetable shortening
1-1/2 cups cooked shredded chicken
1 can black beans, drained and rinsed
2 cans red enchilada sauce
1 can low-sodium Chicken Broth
2, 4oz cans diced Green Chiles
Salt & Pepper to taste
Yield: 1 loaf, serves 4-6

Preheat oven to 375°.
In a bowl, combine the flours. Mix chicken with 3/4 of one can of enchilada sauce. With a mixer beat together the lard and baking powder on medium speed, about 1 minute. Slowly add the combined flours as you continue beating. Gradually add 1/3 to 1/2 cup of room temperature broth until the dough becomes like a soft cake-like batter. Salt & pepper to taste.

Line a 9-inch loaf pan with parchment paper, with plenty of overlap and extended edges. Remove paper and flatten on work surface. Spread dough in a 9-inch x 15-inch rectangle about 1/2-inch thick. Spread a layer of chicken on the dough, followed by the black beans and green chilies. Pour on remaining enchilada sauce.

Roll up the dough jelly-roll fashion and lower gently, using the parchment paper, into the loaf pan. Trim and fold over the paper, then cover the loaf pan with foil and bake for 1 to 1-1/2 hours.
When done, the loaf should feel firm in the center when pressed. If soft, return to oven for a few minutes longer. Let rest 10-15 minutes while you heat the remaining can of enchilada sauce. When done, turn loaf out onto a serving platter and gently remove the parchment paper. Slice into 1-inch thick rounds and pour a little sauce over them.

Chef's Notes: The second time I made this dish I used a French bread pan, that has a curved bottom, instead of the loaf pan, and the shape was more like a giant tamale! The corn crust is so good you won't believe you made it. It was a little easier rolling it up and putting it into a round pan. For ease of rolling, I also used less sauce in the roll, and served more at table to compensate. Use plenty of parchment paper and the pan hardly gets messy, and it works just as well as corn husks. Remember, you can use any filling; I used my leftover turkey from Thanksgiving and it was a hit with the family. I have some Chile Colorado in my freezer that is just begging to be made into one of these crowd pleasing wonders.
