Gourmet Gluten-Free Soft Pretzels
A few weeks ago I read a press release announcing new gluten-free soft pretzels from Kim & Scott's Gourmet Pretzels. I was very interested to learn about the production process since they do produce regular pretzels and their customer service team has been really supportive in answering all my questions. Although I haven't tried these yet, I would definitely consider buying them when I find them in my local supermarket. They sound really delicious!


Gluten-Free Soft Pretzel Ingredients: Gluten Free Flour Blend (Tapioca Flour, Rice Flour, Potato Starch, Granulated Sugar, Xanthan Gum, Sea Salt, Sorghum Flour, Millet Flour, Quinoa Flour, Amaranth Flour, Teff Flour, Baking Powder and Quar Gum), Eggs, Filtered Water, Canola Oil, Yeast, Soda. Contains: Egg

Individuals with food allergies: Made in a facility that processes foods containing wheat and milk. Kim & Scott's is a nut-free facility.

Here is what they had to say:
Gluten Free pretzels are produced on clean and sanitized equipment as first product of the day. All gluten free packaging materials and ingredients are segregated from standard stocks. No additional production is initiated until all GF is packaged. 
Also...
  1. Ingredients for the gluten free items are stored in sealed containers.
  2. All ingredients, hand tools, gloves, hairnets, etc. used for other items are either cleaned and sanitized or removed from the production, baking, and packaging areas.
  3. The production, baking, and packaging areas are washed down with particular attention given to the product contact areas.
  4. Personnel are routed from the personnel areas to the production areas so that they do not come in contact with ingredients that might contain gluten.
  5. Only the sealed containers of ingredients for the gluten free product are brought into the production areas after the area has been cleaned.
  6. Production, baking and packaging areas are kept sealed off until the gluten free product is produced and packaged.
  7. To assure results, finished gluten free products are randomly sampled and checked for possible gluten contamination.

Glutino Pretzel Pie Crust

I read this recipe two weeks ago in the Glutino e-newsletter. I have two big bags of Glutino pretzels at home. After some recent oral surgery, I won't be able to eat them for a while so I might try making this pie crust. It sounds interesting.

Glutino Pretzel Pie Crust
3/4 cup butter, softended
2 tbsp brown sugar
2 1/2 cups of crushed Glutino pretsels

Mix these together, and press the mixture into a 9-inch pie pan. Bake this in the oven for 6-8 minutes at 350°F, and it's ready! Try filling this with strawberries and whipped cream for an easy desert, or a strawberry pie if you're feeling adventurous!

GFCO is Proud to Certify Snyder’s of Hanover’s Gluten-Free Pretzels
Snyder’s of Hanover is the first USA, family-owned business to invest a great deal of time and money into making pretzels safe for gluten-free consumers. Snyder’s understands how important a strict gluten-free diet is to the health of persons with gluten sensitivities, and, because of that, sought the industry’s self-identified Best Practices in manufacturing gluten-free products – the Gluten-Free Certification Organization (GFCO) standards.

To meet GFCO standards, Snyder’s has carefully laid out a plan for production and quality control management that is monitored by third-party auditors for GFCO. Auditors inspect the manufacturing facility on a regular basis and are inspecting all aspects of the production of the finished products being certified gluten-free. This includes all processes and procedures for purchasing ingredients, storage and handling, production, cleaning and even looking into airborne dust contamination. As part of the GFCO application process, risk assessment is determined for ingredients and manufacturing. This determines the amount of raw materials, equipment and finished product the company is required to test onsite. It also determines the number of annual audits a company will have.

Consumer confidence increases with external certifications, and GFCO sets the most rigorous standards for gluten-free GFCO auditors are trained with years of experience working in plant inspections for kosher, organic and HACCP. They have been trained by GFCO to use their skills to also audit for gluten. GFCO auditors may often do “spot gluten testing” as part of their audits. As well, GFCO pulls products randomly from the point of sale to send to labs for detailed gluten testing without the company’s knowledge. GFCO has established a standard for certification at less than 10 ppm gluten, twice as strict as that proposed by the FDA and accepted by Codex and the World Health Organization. Rarely do GFCO products test more than 5 ppm gluten in laboratory testing. GFCO currently provides audits in 10 countries.
It can often take a company several months to work through the certification process. GFCO contractual requirements are stringent. It is our experience that companies certify gluten-free with GFCO because they recognize that GFCO sets the strictest standards and they see the value of third-party validation of their commitment to the product’s consumer market. It is not uncommon to find GFCO products also carry other third-party certifications, such as organic and kosher.

Glutino pretzels are my favorite and I can eat them by the bagful. Chocolate is another favorite of mine.
